Well I promised you a Pineapple Upside Down Cake!! Here I am, and here it is!!!!
Are you ready ?!! Well here goes!
Here is a listing of your ingredients:
5 (8 oz )pkgs. of cream cheese ( you will have to allow these to soften)
1 cup of sugar
3 tbsp. of flour
1 tbsp. vanilla extract
1 cup of sour cream (8 oz.)
1 box of pineapple flavored cake from Duncan Hines
7 eggs (4 eggs will be set aside for the cheese cake portion of the cake , and 3 set aside for the Duncan Hines pineapple flavored cake)
1 stick of butter ( you may need a little more if you don't have enough)
2 cups of brown sugar (this is also approximate)
1 can of pineapple rings
maraschino cherries
pineapple filling or you can use pineapple jam,jelly or Polaner's pineapple pourable all fruit
*pineapple flavoring (I did'nt specify amount here because you are flavoring this to taste)
*pina colada flavoring ( This is also done to taste)

Let's spray the bottom of the pan with a little non stick spray sice we'll be dealing with sticky sugar
Next, let's put the cheese in the bowl. allow the cream cheese to soften
Now add the 1 cup of sugar to the cream cheese.
We can also add the 1 cup of sour cream
Let's add the vanilla extract
It's time to add the pineapple flavoring (to taste)
At this time we can go ahead and add the pina colada flavoring (to taste)
Add 4 of your 7 eggs here (you will save the other 3 for later) You can add your eggs 1 at a time, incorporating them well , 1 at a time with your mixer. Mix the batter completely incorporating all ingredients well.
Let's set the cheescake batter aside for a moment.
Let's concentrate on the sugar ,pineapple and cherries.
First lets work on the sugar.
In a separate pan melt the stick(s) of butter
Mix the sugar with the melted butter
Line the bottom of the outside of the pan with aluminum foil ( the sugar will melt eventually)
Press the brown sugar mixture into the bottom of the springform pan.
It's time for the pineapples!
Add the cherries!
Now we can add the cheesecake batter.
Place the cheesecake base in the oven. Bake at 325 degrees farenheit ( ) for 1 hour 5 minutes or bake until the center is almost set. The center should still jiggle some . (it shouldn't be liquid, but only jiggle some) Don't over bake ( center fully set - you want a golden brown, not a golden burnt cake)
While this is baking let's work on the bottom half of the cake!
We will be using Duncan Hines Pineapple Flavor cake mix. Follow the directions on the back of the box. You should be using 3 of your 7 eggs here.
Bake according to the instructions on the box.
Approximately 1 hour 5 minutes later.......
The cheesecake base is ready!!!!!! Loosen cake from rim of pan by going around edge with a knife.
When your Duncan Hines cake is done baking, and all cakes have cooled, spread your pineapple filling,jam,or pourable fruit on to the cheesecake. Turn your Duncan Hines cake on to the cheesecake.
Place a plate on top of the Duncan Hines portion of the cake. Carefully flip the cake (s) over
Unlatch your springform pan. remove it from your cake.
Voila!!!!!!!!!!
