Hi all! I know you are going to kill me!! I've been away from the online kitchen for a bit. I'm back and guess what I'm here to give you? The recipe for Egg Rolls! Finally, right?!
Well, anyway, here goes!
The ingredients:
Shredded or sliced cabbage
Chopped carrots
Chopped celery
Chopped or thinly sliced onions
Egg Roll wrappers
Salt to taste
Pepper to taste
Accent to taste ( to help bring out flavor)
Ground turkey (or any ground or finely chopped meat you desire)
Liquid smoke (purely an option-especially for those not using some form of smoked meat )
A cup of water (for sealing the wrapper)
Enough oil in a skillet or frying pan to cover the Egg Rolls while frying. Use vegetable or olive oil.
The Cabbage
Slice or shred your cabbage
The Onions
Chop your onions. Chopping small or medium works well in this case.
The Carrots
Chop your carrots. I use my handy dandy chopper. Oh what a time saver! I just love my chopper! Turn the handle on top and look!
The Celery
Let's chop it small too!
Now that we have all of our ingredients all chopped up, lets add a little olive or vegetable oil to our skillet. Let's add enough to get these vegetables frying. Keep in mind that we are not frying the veggies until they are soggy and lifeless. We want them soft, but not soggy!Your onions will be somewhat transparent.
As our veggies are frying let's mix them in the skillet.When they are done and somewhat soft turn off the heat.
In a separate skillet or frying pan, fry your round meat until cooked well done.
Now that your meat is done add it to your veggies.
Mix the meat into the veggies
Carefully add liquid smoke to taste.Add a little at a time (a few drops to 1/8 of a teaspoon) The key here is to have a slightly smokey flavor, not a nasty accrid one. So you'll have to do some tasting here to see what suits you. Now season with your salt , pepper, and Accent. Now's agood time to give a good thourough mixing and incoporating.
The Egg Roll Wrappers
Time to have some fun!!!
Now it's time to build an Egg Roll ! You can begin by preheating the oil you will be frying in. We are going to use medium heat (if you need to turn it up higher, then adjust as you need to.)
Take out an Egg Roll wrapper and put it on a plate. Turn it (since it's square) So that the shape looks more like a diamond shape to you.
Place about approximately 2 to 3 tablespoons of your filling in the center of the wrapper.
Fold the bottom and the top of your wrapper toward the middle
Take one side of the wrapper and bring it to the middle of your Egg Roll. Try to roll the Egg Roll as you go
Now it's time for the water
Take a few fingers and dip it into the water.
Run your fingers down the side you still have open ( you are using the water to seal your Egg Roll.)
Now drop your rolled Egg Roll into your preheated oil.
Once your Egg Rolls are golden brown remove them from the oil and let them drain on a paper towel lined plate or pan.
If you notice , I used tongs to help me remove them from the oil.
These are the best tools to remove them with. If you don't have any, then use a spatula.
Now it's time to serve and enjoy!
